Risotto with truffles
Thinly sliced an onion and
fry it in butter. Heat until it is browned, then add 600 grams of
rice and salt, and cook over high heat for a briefly. Slowly pour the
boiling broth, let it consume before adding more and stir often. Stir
in the rice with butter and parmesan cheese. Serve the risotto on the
plate and then shave over white truffles in thin cuts.
