Chicken Croquettes with Truffles
Chop the chicken breasts
and the pulp to which you would add the breadcrumbs soaked in milk and squeezed to. The chopped truffles, mozzarella and a knob of butter should also be added. Season with salt and pepper, add the cream and beaten eggs. Shape into balls with your hands, flour them
and fry in hot butter, then lower the heat and bring to cooking. The croquettes are served on a warm serving dish.
