DESCRIPTION
The "Bianchetto" white truffle, named Tuber Borchii VITT is a truffle highly sought after for traditional areas of Tuscany, the Romagna and Marche, despite having a market value lower than the white truffle.It grows however, in good quantities in Abruzzo and other regions of central and southern Italy, from the coastal areas to mountain areas. Externally, it can be confused with Tuber Magnum, because originally it comes with the same features; irregular, smooth, off-white, but when it matures it becomes darker. Even the glebe though initially clear darkens. The smell is the characteristic that distinguishes it from the white truffle, because if at the beginning it is fine and pleasant, at a later time it becomes aglioso and very persistent.
It grows in limestone soils, often in deciduous and coniferous forests, its ideal habitat is the pine forest.
The harvest time is from January 15 to April 15.

Storage
The nose is a very sensitive ingredient. E 'can store it in a cool place and for a short period (maximum 7-10 days) wrapped in a breathable gauze and closed in a glass jar.
Before eating
